Tailgate Recipe: Stuffed Hot or Mild Peppers
Ingredients:
8-12 (depending on size) hot or cubanelle (mild) peppers
1 lb. bulk sweet Italian sausage
1 cup seasoned breadcrumbs
2 eggs
1/4 cup spaghetti cheese
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 cup warm water
1 teaspoon parsley
Olive oil
Directions:
Remove tops of peppers and seeds if desired (removing seeds is optional, depending on how hot you want the peppers).
Mix remaining ingredients together in a large bowl.
Using the end of a wooden spoon, stuff meat mixture into peppers.
Place peppers on a foil-lined baking sheet and drizzle with the olive oil. Bake at 400 degrees for 40 minutes, turning the peppers after 20 minutes.
Serve with your favorite pasta sauce and mozzarella cheese (optional).
