Marsha Coffee, teacher at West Branch High School, had her students plant an herb and vegetable garden during its food and fitness class as part of a Farm to Table project. Students planted lettuce, spinach, carrots and cilantro outside WBHS and tended the garden every day until it was ready to harvest. They will use the produce for smoothies, vegetable lasagna and garnishes for other dishes made in class. An article in the Washington Post stated that gardening and growing your own vegetables is not only a healthier option and more cost-effective, it can improve a child’s overall mental and physical health.
