PERFECTION SALAD

2tablespoons unflavored gelatin

1/2cup sugar

1teaspoon salt

11/2cups boiling water

11/2cups cold water

1/2cup vinegar

2tablespoons lemon juice

2cups finely shredded cabbage

1cup celery, chopped

1/2cup green pepper, chopped

1/4cup pimiento, chopped

Mix gelatin, sugar and salt. Add boiling water and stir until the gelatin dissolves. Add cold water, vinegar and lemon juice; chill until partially set. Add vegetables; pour into a 61/2 cup ring mold (or Bundt pan). Chill until firm. Lightly spray with cooking oil so the gelatin slides out of the pan.

FANCY AND FAST CHICKEN

3whole chicken breasts, split and skinned

6slices Swiss cheese

1/4pound fresh mushrooms, sliced (optional)

1can (103/4 ounces) condensed cream of chicken soup

1/2cup dry white wine

2cups herbed stuffing mix (enough to cover the entire top)

8tablespoons (1 stick) butter or margarine, melted

Preheat oven to 350 degrees. Place chicken in lightly greased 9- by 13-inch baking dish. Top each piece with a slice of Swiss cheese. Arrange sliced mushrooms over cheese. Mix soup and wine together and pour over the chicken. Sprinkle stuffing mix over the top and drizzle on the melted butter. Bake for one hour or until chicken is cooked through. Bake longer if using bone-in chicken.

APPLESAUCE BROWNIES

1cup oil

2cups sugar

4beaten eggs

1cup applesauce

2cups flour

1teaspoon baking powder

1/2teaspoon baking soda

1/2teaspoon salt

4squares melted, unsweetened chocolate

Chocolate

1teaspoon vanilla

1cup chopped walnuts (optional)

Mix together oil and sugar. Then add remaining ingredients in order. Spread into greased and floured small cookie sheet (11- by 16-inch) or jelly roll pan. Bake in preheated 350 degree oven for 20 to 27 minutes, until toothpick comes out clean. Cool, then dust with powdered sugar.
