BLACK BEAN SOUP

2cups black beans

3tablespoons butter

1onion

1carrot

2stalks celery

2sprigs parsley

1teaspoon salt

1/8teaspoon pepper

1/8teaspoon cayenne

2tablespoons flour

1hard-cooked egg

1lemon

Soak beans 12 hours. Drain. Melt butter in pan. Slice onion into it and saute 5 minutes. Add beans, 2 quarts water, sliced carrot, celery, parsley, salt, pepper and cayenne. Cover and simmer 3 to 4 hours, adding more water, if necessary. Press through a sieve. Reheat over boiling water. Mix flour to a smooth paste with 3 tablespoons cold water. Add flour paste to soup. Stir until thick and smooth. Add seasonings, if needed. Chop egg and add to soup. Serve with a slice of lemon at each plate.

GRAHAM APPLE MUFFINS

16graham crackers

1/4teaspoon salt

2tablespoons sugar

1/2cup milk, scalded

1egg, well beaten

2tablespoons shortening, melted

2teaspoons baking powder

2cooking apples

Cinnamon

Crush and roll crackers; add salt, sugar and hot milk and mix well. Add egg and shortening. Sift baking powder over batter and mix well. Fill greased muffin tins two-thirds full. Pare, core and slice apples; place 2 or 3 slices on top of each muffin and sprinkle with cinnamon. Bake at 350 degrees for 20 to 25 minutes. Makes 12 small muffins.

HEAVENLY HASH

6oranges

4bananas

1/2pound California grapes

1/2pound marshmallows

1/2cup nut meats

1/2cup sugar

Whipped cream

Peel and dice oranges, bananas, pit California grapes, add nut meats and marshmallows, cut into pieces. Mix all with sugar and serve on lettuce leaf with whipped cream on top.

ASPARAGUS FRITTERS

11/2cups flour

1cup asparagus, cut in pieces

3teaspoons baking powder

1/2cup milk

1egg

1/2teaspoon salt

Sift dry ingredients, beat egg, add milk and add to dry ingredients. Stir asparagus into the batter. Drop by tablespoonfuls into hot, deep fat at 365 degrees. Drain on brown paper. Serve hot.
