Junior Women’s League of Canfield’s “SIMPLE PLEASURES II”

BLUEBERRY MUFFINS

3/4cup milk

1/2cup vegetable oil

1teaspoon lemon juice

1cup fresh or frozen blueberries

2cups flour

1/2cup sugar

2tablespoons baking powder

1teaspoon salt

Heat oven to 400 degrees. Grease bottom of 12-cup muffin pan. Beat together egg, milk, vegetable oil and lemon juice. Mix dry ingredients together, and add liquid mixture. Stir just until dry ingredients are moistened. Fold in blueberries. Fill muffin cups 3/4 full of batter, and sprinkle tops with sugar. Bake 20 minutes or until lightly browned.

RATATOUILLE

2eggplants

Salt

4zucchini

5tablespoons olive oil

2Spanish onions, sliced

2green peppers, seeded and sliced

21/2teaspoons chopped fresh basil

1large clove garlic, minced

2cans (1-pound, 12-ounces each) peeled plum tomatoes

Salt and freshly ground black pepper

2/3cup dry white wine

Cut eggplants in half lengthwise and score each cut surface diagonally. Sprinkle the eggplants liberally with salt and allow to stand for 30 minutes to degorge. Rinse them thoroughly and pat dry. Roughly chop the eggplants and slice the zucchini thickly. Set zucchini to the side.

Peel onions, halve and cut into thin slices. Cut peppers in half, lengthwise, and remove and discard the seeds and white pith. Chop the flesh roughly. Heat oil in large saucepan and fry onion for 5 minutes until soft and just beginning to brown. Stir in peppers and zucchini, and cook gently for 5 minutes until they soften. Remove all vegetables from the pan and set aside. Put chopped eggplant into the saucepan with the vegetable juices. Cook gently until it begins to brown. Return the other vegetables to the pan.

Add canned tomatoes, garlic and basil to the sauteed vegetables, mixing well to blend evenly. Bring to a boil, then reduce the heat and simmer for 15 minutes, until liquid is reduced and thick. Add wine and continue cooking for another 15 minutes. Serve immediately, or chill and serve cold.
