Junior Women’s League of Canfield’s “SIMPLE PLEASURES II”
ITALIAN QUICHE

1pound Italian sausage
1can Contadina diced tomatoes with roasted garlic, drained
1small onion, chopped
Spices to taste: thyme, basil and parsley
2tablespoons flour
2cups grated Swiss cheese
Parmesan cheese
Salt and pepper to taste
1cup cream
1/2cup milk
4eggs
1unbaked 9-inch pastry shell
Cut sausage into pieces and fry in large skillet. Add tomatoes, onion and spices, and cook for approximately 2 minutes. Put the mixture into the unbaked pastry crust. Combine flour, grated cheese, Parmesan, salt and pepper; sprinkle over sausage. Combine milk, cream and eggs; pour over the cheese. Bake at 450 degrees for 15 minutes, then reduce heat to 375 degrees and bake for 30 minutes or until set.
CHICKEN SPECTACULAR

4cups cooked chicken breast, cubed
6ounces sliced mushrooms
1can French-cut green beans, undrained
1can condensed cream of celery soup
1small box Uncle Ben’s Wild Rice or white rice, cooked
1large onion, chopped
1cup salad dressing or mayonnaise
1/2cup chicken broth
Bread crumbs
Assemble all but crumbs in large casserole dish. Sprinkle bread crumbs on top. Bake at 350 degrees for 35 to 40 minutes. Recipe freezes well.
BETTY J’S PINEAPPLE COOKIES

Filling:
2cups crushed pineapple (with sweetened juice)
2cups sugar
2tablespoons corn starch
Cook pineapple, sugar and cornstarch over low-medium heat until thickened. Allow to cool.
Crust:
3cups flour
2teaspoons baking powder
3tablespoons sugar
1/2teaspoon salt
1cup margarine
3/4cup milk
1egg (separated)
1/2teaspoon vanilla
11/2cups finely chopped walnuts
Mix flour, baking powder, sugar, salt, margarine and vanilla together. Slightly beat egg yolk and add milk. Mix egg and milk mixture with flour mixture. When flour and milk mixtures are blended, roll the dough into a long rectangle. Put half the dough into a 9-inch by 13-inch baking dish. Spread pineapple filling over dough and then place the remaining dough on top of filling. Beat egg white and spread on top of dough; sprinkle with chopped walnuts. Bake at 350 degrees for 30 minutes. Cool and cut into squares.
