hot dog & egg breakfast skillet

1tablespoon olive oil
2cups frozen hash browns, shredded
3all-beef hot dogs, cut into 1/2-inch rounds
1cup mushrooms, sliced
1cup peppers, sliced small
4eggs
1/4cup milk
1/4teaspoon salt
1/4teaspoon oregano leaves, dried
1/2cup Italian cheese blend, shredded
Heat oil in large nonstick skillet over medium-high heat until hot. Add potatoes; cook, covered, stirring occasionally until golden, 6 to 8 minutes. Add hot dogs, mushrooms and peppers; cook, uncovered, stirring occasionally until vegetables are tender, 4 minutes. Meanwhile, beat eggs, milk, salt and oregano in medium bowl until blended. Reduce heat to medium. Pour eggs over mixture in skillet. As eggs begin to set, gently pull the eggs across the pan with an inverted turner. Continue cooking until eggs are thickened and no visible liquid egg remains. Do not stir constantly. Sprinkle with cheese. Remove from heat. Cover pan. Let stand until cheese is melted, 2 to 3 minutes.
SWEET WHISKEY BARBECUE SAUCE

2cups store-bought barbecue sauce
2tablespoons yellow mustard
1/4cup pure maple syrup
1/4cup Tennessee whiskey or Kentucky bourbon
1/4teaspoon chili powder
1/4cup water
Combine all ingredients in a pot and cook over medium heat. Simmer, uncovered, stirring occasionally, 10 to 15 minutes or long enough to cook the alcohol out of the sauce.
CHEESY CHILI DOG MACARONI

1cup elbow macaroni
115-ounce can prepared chili with beans
4all-beef hot dogs, cut into 1/2-inch rounds
114-ounce can tomatoes, diced
1cup mild cheddar cheese, shredded
1cup corn chips, crushed
Preheat oven to 350 degrees. Prepare macaroni according to package directions; drain. Combine chili, hot dogs and tomatoes in medium saucepan. Cook and stir over medium heat until hot. Stir in macaroni and Ω cup cheese. Spoon into a 2-quart baking dish. Cover and bake for 20 minutes. Remove cover and top with remaining cheese, combined with corn chips. Bake for 10 minutes or until hot.
