GOLDEN SALAD

1heaping tablespoon gelatin

1/4cup cold water

1cup pineapple juice

1/4cup mild vinegar

1/4cup orange juice

Salt

1/4cup sugar

1cup orange, cut into bits

11/2cups cubed canned pineapple

1cup ground raw carrots

Mayonnaise and whipped cream

Paprika

Dissolve gelatin in water. Add pineapple juice, mild vinegar, orange juice, sugar and pinch of salt. Mix well, and when it begins to solidify, add orange, cut into bits, cubed pineapple and carrots. Turn into mold and let solidify or use individual molds. When ready to serve, unmold onto lettuce leaf and add 1 tablespoon mayonnaise mixed with whipped cream. Add dash of paprika on top.

BREAD AND BUTTER PICKLES

12medium cucumbers

5medium onions

1/4cup salt

1cup sugar

11/2teaspoons mustard seed

11/2teaspoons celery seed

1/2teaspoon curry powder

1cup vinegar

1/2cup water

Wash cucumbers, peel onions and cut into 1/4-inch rings. Arrange in layers, sprinkling salt on each layer. Let stand 2 to 3 hours. Drain. Combine remaining ingredients and heat to boiling. Add cucumbers and onion and simmer 10 minutes. Pack in hot, sterilized jars and seal. Makes about four pints.

BAKED CORN

2tablespoons butter or fat

2tablespoons flour

11/4cups milk

1tablespoon sugar

2cups canned or stewed corn

Salt

Pepper

2well-beaten eggs

Melt fat in pan. Add flour. Blend well. Add milk slowly. Bring to a boil, stirring constantly. Add corn and sugar. Season to taste with salt and pepper. Add eggs. Mix thoroughly. Place in greased baking dish. Bake at 350 degrees for 25 to 30 minutes. Serves 6.

APPLE TAPIOCA

4tart apples (pared and cut in eighths)

3tablespoons butter

1cup light brown sugar

3cups boiling water

1/4teaspoon mace

1/2cup quick-cooking tapioca

1/2teaspoon salt

2tablespoons lemon juice

Arrange apples in greased, shallow baking dish. Dot with butter and sprinkle with mace. Combine tapioca, sugar, salt, boiling water and lemon juice in saucepan and mix well. Bring mixture to a full boil over direct heat, stirring constantly. Pour over apples. Cover and bake at 350 degrees for 35 minutes or until apples are tender. Serve warm or cold with cream.
