DAUGHTER’S OF THE AMERICAN REVOLUTION’S “MAHONING CHAPTER COOKBOOK”
SPICY WHITE CHICKEN CHILI

2chicken breasts, cut into pieces
1/2carton chicken stock
2cans diced tomatoes with green chilis
1yellow pepper, chopped
1red pepper, chopped
1onion, chopped
2carrots, chopped
2jalapenos, chopped
2cans Great Northern beans (do not drain)
1/4jar hot green salsa
1envelope enchilada seasoning
1tablespoon olive oil
Saute chicken, carrots and onion in olive oil and enchilada seasoning until onion is translucent. Add remaining ingredients and simmer for 30 minutes. Puree 1 cup of chili and return to pot. Continue to cook down until desired consistency is reached.
BAR B QUE BEEF

3pounds ground chuck
1can tomato soup
2onions, grated
1cup chili sauce
1green pepper
1tablespoon vinegar
1teaspoon sugar
1teaspoon mustard
Salt and pepper
Heat oven to 325 degree. Mix together and bake, uncovered, for 2 hours. No need to brown the beef. If desired, make the day before and serve it from the crockpot set on low. Use small (slider) buns.
CHEDDAR BAY BISCUITS

2cups Bisquick
3/4cup buttermilk
1cup shredded cheddar cheese
2tablespoons butter, melted
1/4teaspoon garlic powder
Preheat oven to 375 degrees. Line baking sheet with parchment paper. Combine Bisquick, buttermilk and shredded cheese. Place dough in small scoops on pan. Bake for 10 to 12 minutes, until golden. Combine melted butter and garlic powder. Brush over hot biscuits.
