POTATO-CRUST CHICKEN QUICHE

4cups frozen shredded hashbrowns
3tablespoons butter
1cup shredded pepper jack cheese
1cup diced cooked chicken
4eggs
1cup half & half or milk
1/2teaspoon salt
Thaw hashbrowns and pat with paper towels to remove excess moisture. Press hashbrowns into 9-inch pie dish. Brush with butter. Bake at 425 degrees for 20 minutes. While baking, beat eggs, half & half or milk, and salt. When hashbrowns are done, remove from oven and reduce heat to 350 degrees. Sprinkle cheese and chicken on top of hashbrowns and then pour egg mixture over chicken. Bake for another 20 to 25 minutes. Let sit for 5 minutes before serving.
SAVORY MASHED POTATOES

12large potatoes, peeled, sliced and boiled in salt water for 10 minutes
18-ounce carton cream cheese, softened
18-ounce sour cream
1teaspoon onion powder
1teaspoon garlic powder
1/4cup butter, melted
Combine cooked potatoes, cream cheese, sour cream, onion powder, and garlic powder. Whip until fluffy. Add a small amount of milk if needed. Spread into 9-inch by 13-inch baking pan. Drizzle melted butter over potatoes and cook for 1 hour in preheated oven at 350 degrees. Can freeze until ready to cook; omit butter until ready to put into oven.
SPICY POACHED WHITE FISH

1fillet white fish
1teaspoon celery salt
1teaspoon pepper
1teaspoon salt
1tablespoon fish sauce
1tablespoon soy sauce
1tablespoon rice vinegar
1tablespoon onion, diced
1/2teaspoon jalapeno, diced
Lettuce leaves
Place fish in pan with water to cover half the fish. Add celery salt, pepper, and salt. Poach fish until it flakes. Let fish cool down. Break fish into chunks. Add rest of ingredients. Chill and serve in lettuce cups.
