Hugh G. Earnhart’s “Eat like a Thresherman: Recipes of a Farming Generation”
Lima Bean Soup
21/2cups boiled lima beans
2 cups milk
1 slice onion, chopped
3 slices carrot, chopped
3tablespoons butter
2tablespoons flour
11/2 teaspoons salt
1/4 teaspoon pepper
Simmer beans 20 minutes in 2 cups of water. Rub through sieve. Add milk. Saute onion and carrot 5 minutes in butter. Strain, discarding vegetables. Blend flour in butter. Add salt and pepper. Stir into hot soup. Serves 6.
candied sweet potatoes
6 medium sweet potatoes, peeled
1/4 cup orange juice
1 cup dark corn syrup
3 tablespoons butter or enriched margarine
3 tablespoons flour
Parboil sweet potatoes in salted water. Drain. Place in a greased utility dish. Combine flour with orange juice, add syrup, mix well. Pour over sweet potatoes and dot with butter or margarine . Bake uncovered for 1 hour.
Shepherd’s pie
2cups cold meat, cut in pieces
11/2 cups hot mashed potatoes
1/2teaspoon salt
1/8 teaspoon pepper
Few drops onion juice
3 tablespoons leftover gravy
1egg yolk
2 teaspoons cold water
Grease a baking dish and line bottom with mashed potatoes. Season meat with salt, pepper and onion juice; moisten with grave; place in dish. Cover evenly with mashed potatoes. Spread top with egg yolk beaten in cold water. Bake in hot oven (425 degrees) until brown and heated through, about 20 minutes. Individual pies may be made in small dishes or custard cups, cooking about 15 minutes. Serves 6.
