Vanilla and cinnamon add sweetness while chipotle chile pepper and ginger bring an unexpected heat to these grilled fruit skewers. For variety, add sliced star fruit to this jazzed up dessert.

1/2cup packed brown sugar

1/4cup rum

2teaspoons McCormick Pure Vanilla Extract

1/2teaspoon McCormick Gourmet

Organic Cinnamon, Ground Saigon

1/2teaspoon McCormick Gourmet

Organic Ginger, Ground

1/4teaspoon McCormick Gourmet Chile Pepper, Chipotle

1large pineapple, peeled, cored, cut into 2x1-inch pieces

2ripe bananas, peeled, cut into 2x1-inch pieces

Stir first 6 ingredients in small bowl until sugar dissolves. Set aside.

Thread fruit alternately onto 6 double skewers. Brush with spice mixture. Let stand 5 minutes.

Grill or broil fruit skewers on medium heat 10 minutes or until golden brown, basting with spice mixture and turning occasionally. Serve with vanilla ice cream, if desired.

Mango and Sweet Chili Chiller

Quench the summer’s heat with this Thai-inspired blender cocktail featuring sweet mango.

2cups small ice cubes

1cup frozen mango, chunks

1/4cup sugar

3ounces rum

2tablespoons fresh lemon juice

1tablespoon Thai Kitchen Sweet Red Chili Sauce

1tablespoon grenadine syrup

Place ice, mango, sugar, rum, lemon juice and chili sauce in blender container; cover. Blend on high speed until smooth.

To serve, pour a small amount of grenadine syrup into bottom of each beverage glass. Slowly pour mango mixture into each glass so grenadine syrup forms a red swirl.
