Hugh G. Earnhart’s “Eat like a Thresherman: Recipes of a Farming Generation”

CHICKEN SALAD SUPREME

1cup cold, chopped, cooked chicken

1cup cold, chopped, cooked veal

1cup diced celery

1/4cup chopped walnuts

1/2cup mayonnaise

Salt

Pepper

Lettuce

6stuffed olives

Mix chicken, veal, celery, walnuts and mayonnaise. Season to taste with salt and pepper. Form into mounds on beds of lettuce on 6 salad plates. Top each mound with an olive. Serves 6.

PICNIC BEANS

1can (1 pound, 14 ounces) baked beans with molasses and pork

2tablespoons dark brown sugar

Dash of salt

1/4teaspoon dry mustard

1can (14 ounces) pineapple gems

2tablespoons syrup drained from gems

4slices bacon, if desired

Pour beans into an oven casserole or 4 individual casseroles. Add brown sugar, salt, mustard and pineapple gems which have been drained and 2 tablespoons of the pineapple syrup. Mix well, cover and bake in a moderately hot oven (375 degrees) for 25 to 30 minutes or until beans are very hot. Beans may be topped with bacon slices before placing in the oven, if desired. Serves 4.

WIENER SCHNITZEL

6veal chops or steaks

Salt and pepper

2eggs, slightly beaten

Flour

3tablespoons bacon drippings

Juice of 1 lemon

1tablespoon flour

1cup thick sour cream

Sprinkle veal with salt and pepper. Dip into eggs, then into flour. Brown on both sides in hot bacon drippings. Cover and cook slowly until chops are tender, about 1 hour. Sprinkle with lemon juice and arrange on hot platter. Blend flour with fat in pan; add sour cream and cook 3 minutes, stirring constantly. Season with salt and pepper and serve with chops. Garnish with lemon slices. Serves 6.
