Breakfast Quesadillas

8 eggs
1/4 cup milk
1 package McCormick Southwest Chicken Quesadillas Seasoning Mix
1 cup cubed cooked ham
2 tablespoons butter
8 flour tortillas (8-inch)
11/2 cups shredded Cheddar cheese
Preheat oven to 400 ∞F. Beat eggs, milk and Seasoning Mix in medium bowl. Stir in ham. Melt butter in large nonstick skillet on medium heat. Add egg mixture; cook and stir until eggs are set.
Place 4 of the tortillas on 2 baking sheets. Spread 1/4 of the egg mixture evenly on each tortilla. Sprinkle with cheese. Top with remaining tortillas.
Bake 5 to 10 minutes or until cheese is melted and tortillas are lightly browned. Cut into wedges to serve. Serve with salsa, if desired.
Maple Apple Granola
You will love the sweet toasted flavor of homemade granola. This version has maple, walnuts and dried apples, making it delicious for breakfast, served with milk or yogurt.

Cook time: 30 minutes
1/2 cup firmly packed brown sugar
2 egg whites
2tablespoons canola oil
1 tablespoon McCormick Æ Cinnamon, Ground
1/2 teaspoon McCormick Æ Ginger, Ground
1 teaspoon McCormick Æ Maple Extract
2 cups old fashioned oats
1 cup chopped walnuts
1/2 cup chopped dried apples
Preheat oven to 250 ∞F. Mix brown sugar, egg whites, oil, cinnamon, ginger and maple flavor in small bowl until well blended. Set aside.
Place oats and walnuts in large bowl. Add egg white mixture; toss until evenly coated. Spread evenly on foil-lined 15x10x1-inch baking pan.
Bake 30 minutes, stirring halfway through cook time. Cool completely on wire rack. Stir in dried apples. Store in airtight container up to 1 week.
