chocolate scotcheroos

“These cookies will be gone before you know it!”
1cup granulated sugar
1cup light corn syrup
11/2cups peanut butter
6cups Rice Krispies
Topping:
1cup chocolate chips
1cup butterscotch chips
Combine sugar and corn syrup in sauce pan. Cook (stirring often) until mixture boils. Remove from heat. Stir in peanut butter and mix well. Add Rice Krispies, mix well. Press mixture into greased 13-by 9-inch pan (use wax paper to spread evenly). Melt chocolate and butterscotch chips in microwave, stirring often. Spread over cookie mixture. Cool until firm. Cut into squares. Yields two dozen.
WHITE CHOCOLATE RASPBERRY BARS

2sticks butter (1 cup)
3/4teaspoon baking soda
11/2cups all-purpose flour
11/4cups packed brown sugar
11/2cups oatmeal
Filling:
1jar seedless raspberry jam
11/2cups white chocolate chips or wafers
Preheat oven to 350 degrees. Mix together butter, baking soda, flour and brown sugar, mix well. Add oatmeal. Pat half the mixture into 13-by 9-inch pan. Bake for 10 minutes. Remove from oven. Spread jam. Top with white chocolate. Top with remaining crumb mixture. Bake 20-25 minutes.
EASY OREO TRUFFLES

116-ounce package of Oreo cookies
18-ounce package of cream cheese
28-ounce packages Baker’s semi-sweet baking chocolate, melted
Crush nine cookies and reserve for later use, crushing remaining cookies to fine crumbs, place in bowl. Add cream cheese and mix until well blended. Roll cookie mixture into small balls. Dip balls in melted chocolate and place on wax-paper covered cookie sheet, sprinkle with reserved crumbs. Refrigerate until firm.
