“PARTY FAVORITES” BY ANGELS OF EASTER SEALS

FAST FABULOUS FRITTATA

2strips bacon, cut in 1/2 inch pieces

1onion, slivered

1red pepper, cut into strips

1green pepper, cut into strips

2tablespoons olive oil

4eggs, slightly beaten

3tablespoons milk

1tablespoon parsley, chopped

Salt and pepper to taste

Cook bacon in 10-inch ovenproof skillet on medium heat about 6 minutes. Remove bacon to a paper towel. Reduce to low heat. Add onions and peppers to skillet. Add extra oil, if needed. Saute 5 minutes. Remove from heat and add bacon pieces. Preheat broiler. Beat eggs, milk, parsley and seasonings in bowl. Pour over vegetables in skillet. Cook the mixture on medium heat until bottom is set and top is slightly wet. Place under broiler 4 to 6 inches from heat until top of frittata is puffy, about 2 to 3 minutes. Slice in wedges and serve.

HEARTY WINTER MINESTRONE SOUP

3/4pound Italian sausage, casings removed

1tablespoon vegetable oil

1/2cup carrots, sliced

1/2cup celery, sliced

1/2cup green pepper, cut in 1/2-inch strips

1can beef broth

1can Zesty tomato soup

11/2cups water

1cup bow-tie pasta

Shape sausage into 3/4-inch meatballs. In a saucepan, heat vegetable oil and cook meatballs until browned, stirring often. Spoon off all but 1 tablespoon drippings. Add carrots, celery and green pepper strips and cook for 5 minutes. Add beef broth, zesty tomato soup and water. Heat to boiling, add pasta and cook on low for 10 minutes or until pasta is cooked.

CHICKEN A LA ITALIANO

2cups Progresso Italian bread crumbs

1cup grated Parmesan cheese

1beaten egg

4doubled, boneless, skinless chicken breasts, split

1can College Inn chicken broth

Cut each breast in two. Mix bread crumbs and cheese. Dip chicken pieces in beaten egg; then into crumb mixture. Fry in oil until brown. Drain on paper towels. Put in 9- by 13-inch dish and pour chicken broth over. Cover with foil and bake 1 hour at 350 degrees. Serves 8.
