Hugh G. Earnhart’s “Eat like a Thresherman: Recipes of a Farming Generation”

4pounds beef (chuck, rump or round)

Salt and pepper

1 pint vinegar

4bay leaves

12peppercorns

4cloves

1bunch carrots, cut into strips

6onions, sliced

1tablespoon sugar

12gingersnaps, crumbled

Wipe meat with damp cloth and sprinkle thoroughly with salt and pepper. Place in an earthen dish and add vinegar and enough water to cover. Add bay leaves, peppercorns and cloves and let stand tightly covered in a cool place for 5 days. Drain meat, place in a Dutch oven and brown well on all sides. Add carrots, onions and 1 cup of spiced vinegar mixture. Cover tightly and cook over low heat about 3 hours or until meat is tender. When meat is cooked, add the sugar and crumbled gingersnaps and cook for 10 minutes. This makes delicious gravy. If necessary, more of the spiced vinegar may be added for cooking meat or making gravy. Serves 8.

11/2cups sifted cake flour

1/2teaspoon salt

1teaspoon baking powder

1/2cup shortening

1cup granulated sugar

2eggs, beaten

1/2teaspoon vanilla

1cup brown sugar, sifted

1egg white, stiffly beaten

1cup nut meats, chopped

Sift flour, salt and baking powder together. Cream shortening with granulated sugar until fluffy. Add eggs, vanilla and sifted ingredients and mix well. Spread batter very thin on baking sheet. Fold brown sugar into egg white, spread over cookie batter and sprinkle with nuts. Bake in oven at 325 degrees for 30 minutes. Cut into squares. Makes 30.
