SUNSHINE CAKE

1box yellow cake mix
1/4cup applesauce
4eggs
1can 11 ounces mandarin oranges in light syrup
18-ounce container light Cool Whip
1package 3.4 ounces instant vanilla pudding
1can crushed pineapple in juice
1/2cup coconut (optional)
Preheat oven to 350 degrees. In a large bowl stir together yellow cake mix, applesauce, eggs and mandarin oranges until moist. Beat by hand for three minutes. Coat 9x13-inch pan with cooking spray. Put the batter in the pan and bake for 30-40 minutes or until toothpick inserted in center comes out clean. Cool completely. For frosting, in a large bowl, mix Cool Whip, one package instant vanilla pudding and can of crushed pineapple and coconut until blended. Spread over cake. Store in refrigerator. Serves 16.
BROCCOLI SALAD

3-4bunches broccoli, finely chopped
1large red onion, chopped
1pound cooked bacon, chopped
1-2tablespoons Miracle Whip
1-2teaspoons sugar
Splash or so of milk
1package 8-ounces shredded cheddar cheese
Combine broccoli, red onion and bacon in large serving bowl. In separate bowl, mix Miracle Whip, sugar and milk until well blended. Pour Miracle Whip mixture over broccoli mixture. Blend until coated. Add cheese just before serving.
EGG GOOP

12hard boiled and peeled eggs
1medium onion
3/4cup green olives with pimentos chopped and 2 tablespoons juice
1cup mayonnaise
5celery stalks, chopped
1green pepper, chopped
1teaspoon black pepper
Handful of fresh parsley
Chop eggs in small to medium size. Mix all ingredients together. Serve alone, for sandwiches or dip.
