VI’S BROCCOLI RICE CASSEROLE

1 box Uncle Ben’s Wild Rice Mix
14-ounce can sliced mushrooms
1can cream of mushroom soup
1box frozen chopped broccoli or cauliflower
4ounces Mozzarella cheese, grated
Cook rice as directed on package. Add remaining ingredients except cheese and turn into a greased casserole. Sprinkle cheese over top and bake at 350 degrees until cheese is melted and all ingredients are hot, at least 20-25 minutes.
ZESTY ROASTED VEGETABLES

1/2pound whole button mushrooms
1/2pound baby carrots
1onion, peeled, cut into 1/2-inch thick wedges
1cup broccoli
1cup cauliflower
1/2cup light zesty Italian dressing
1/2cup grated Parmesan cheese, divided
Heat oven to 425 degrees. Line 15x10x1-inch pan with foil, spray with cooking spray. Toss vegetables with dressing and 1/4 cup cheese. Spread into prepared pan. Bake 28 to 30 minutes or until vegetables are tender, stirring after 15 minutes. Top with remaining cheese.
KOLACHI

3cups flour
1/2cup butter
1/2cup milk
1small cake yeast
2tablespoons sugar
1teaspoon salt
1teaspoon vanilla
Mix all together. Divide dough into 3 balls. Put in refrigerator overnight. Roll out dough on floured board and fill with favorite filling. Put on ungreased cookie sheet. Let rise for two hours. Bake at 325 degrees for 45 minutes. Makes 3 rolls.
CREAM CHEESE DESSERT PIE

3ounces Philadelphia cream cheese
1/2cup confectioner’s sugar
1can Thank You pie filling
1cup Cool Whip
1graham cracker pie crust
Mix together cream cheese and confectioners sugar. Add pie filling and Cool Whip. Pour mixture into pie crust. Chill 4 hours.
