“PARTY FAVORITES” BY ANGELS OF EASTER SEALS

KILLER EGGNOG

1dozen eggs (12 yolks and 6 whites)

1cup sugar, divided

1/3cup confectioner’s sugar

1quart milk

1pint whipping cream

1quart vanilla ice cream

1cup dark rum

1cup bourbon

1cup vodka

1/2cup sweet sherry

Nutmeg to taste

Separate yolks and whites of eggs. Beat yolks until fluffy with 1/2 cup sugar. Continue to beat slowly while adding bourbon, rum and vodka. Add milk and set aside. Reserve 2 tablespoons sherry. Blend rest of sherry with ice cream and beat into yolk mixture. Whip whipping cream and confectioners’ sugar. Fold in 2 tablespoons sherry. Fold into egg mixture and refrigerate. Place mixture in punch bowl. Just before serving, beat 6 egg whites and 1/2 cup sugar. Arrange in dollops on top of eggnog. Sprinkle with nutmeg.

SWISS POTATO KUGEL

1cup finely chopped onion

2tablespoons butter

4cups shredded or diced, cooked, peeled potatoes

2cups shredded Swiss cheese

1/4cup flour

1teaspoon salt

1/4teaspoon pepper

3 eggs

3/4cup half-and-half

Tomato slices

Fresh thyme

In a large skillet, saute onion in butter until tender. Remove from heat, add potatoes. Toss cheese with flour, salt and pepper; add to skillet and blend well. In a small bowl, combine eggs and cream. Stir into potato mixture. Spoon into a greased 9-inch square baking dish. Bake uncovered at 350 degrees for 20 to 30 minutes or until golden brown. Cool 5 minutes, cut into squares. Garnish with tomato and thyme. Serves 9. Can be prepared the day before, covered and refrigerated overnight. Remove from refrigerator 30 minutes before baking. Bake for 30 to 40 minutes.
