buckeye NO BAKE cookies

11/2cups creamy peanut butter
1stick margarine
11/2teaspoons vanilla extract
31/2cups confectioners sugar
16ounces dipping chocolate
Mix all ingredients except chocolate together. Form into 1 or 11/2 inch balls. Put a toothpick in the center, place on wax paper and refrigerate for one hour. Melt two cups chocolate according to directions. Dip each Buckeye into the melted chocolate allowing the top of the peanut butter center to be exposed. Place on wax paper and allow to air dry. Remove toothpick from cookie. Yields 4 dozen.
“ANDES” CHOCOLATE MINT COOKIES

3/4cup margarine
11/2cups packed brown sugar
12ounce package chocolate chips
21/2cups all purpose flour
2tablespoons water
2large eggs
11/4teaspoons baking soda
Topping:
3packages Andes Mints (unwrap while baking cookies)
Preheat oven to 350 degrees. Heat butter, sugar, chocolate chips and water in heavy saucepan over low heat until chocolate is melted, stirring well. Pour into large mixer bowl, let set for 10 minutes to cool. With mixer at medium speed, beat in eggs one at a time. Mix in dry ingredients at low speed until blended. Refrigerate one to two hours, roll into balls. Place on parchment paper and bake for 12 to 15 minutes. Immediately place an Andes mint on top of each cookie to melt. Swirl with a knife. Yields three to four dozen.
