Rueben Casserole

132 ounce bag or jar of sauerkraut, very well drained

1pound deli style corned beef, chipped

18 ounce bottle thousand island dressing

1pound Swiss cheese, slices

12slices buttered rye bread, cut into 1 inch cubes

Preheat oven to 350 degrees. Use a 9- by 13-inch dish sprayed with Pam. Start with layer of sauerkraut, then corned beef, dressing, Swiss cheese, top with cubed bread. Press down a little. Bake uncovered for 30 minutes. Let set just a little before service. Serves 6. (A small amount of thousbnd island dressing and/or mustard in a bowl can be served, if needed.)

Zucchini Corn Pancakes

1pound grated zucchini

1/2teaspoon dried basil

1cup corn kernels, frozen, canned or roasted

4large eggs, beaten (egg beaters will work too)

1/4teaspoon garlic powder

1/2cup or so of shredded Cheddar cheese

3/4cup all purpose flour

1teaspoon salt

1/2teaspoon dried oregano

Salt and pepper to taste

2tablespoons olive oil

In colander over sink, add salt to grated zucchini and gently toss to combine. Let sit for 10 minutes or so. Use a clean towel or paper towel to drain zucchini completely. In a large bowl, combine zucchini, corn, eggs, basil, oregano and garlic powder; season with salt and pepper to taste. Stir in cheese and flour until combined. Heat olive oil in a large skillet over medium heat. Scoop tablespoon of batter for each pancake. Flatten with fork and cook until underside is golden brown, about 2 minutes. Turn over and do the same.

No Bake Energy Bites

1cup oatmeal

1/2cup mini chocolate chips

1/2cup ground flax seeds

1/2cup peanut butter

1/3cup honey

1teaspoon vanilla

Mix and roll into balls. Refrigerate.
