Good Greens recipes


Here are a few ideas to incorporate greens into your diet.

Sauteed Greens

Serving Size: 4 ½ c. servings

1 pound collard greens

4 medium garlic cloves

2 Tbsp. canola oil

¼ tsp salt

¼ tsp ground pepper

Remove hard stems from greens.

Stack leaves on top of each other and roll into a tube shape.

Use a sharp knife to slice leaf rolls into ¼ inch wide strips.

In a large bowl filled with cold water, add cut greens.

Allow any dirt to settle to the bottom of the bowl.

If the leaves are very dirty, repeat this step. Lift greens out of the bowl.

Shake off excess water.

Peel and mince the garlic.

In a large skillet over medium heat, heat oil.

Add greens. If greens do not all fit in the pan, cook in 2 batches.

Stir greens until wilted, about 1-2 minutes.

Reduce heat to medium. Add garlic. Cook until greens are soft and excess water is gone, about 5-7 minutes. Season with salt and pepper.

Serve immediately.

Spinach Salad

4 cups spinach

2 tomatoes, sliced

½ cup roasted pecans

½ cup red onion rings

2 oz. shaved Parmesan cheese

Place washed spinach in a bowl. Add tomatoes, red onions, pecans and toss.

Add shaved Parmesan. Add your favorite salad dressing. Enjoy!

Pasta with Beans and Greens

1 -16 oz. whole wheat pasta

2 med onions

1 med carrot

3 large cloves garlic

2 pounds spinach or kale

2 – 15 ½ oz. cans great northern, cannellini or lima beans

2 Tbsp. canola oil

1 tsp. oregano

1 tsp. dried red pepper flakes

¾ tsp. salt

½ tsp. ground black pepper

Cook pasta following package directions. Drain, reserving 1 cup pasta water. Set aside.

While pasta is cooking, rinse, peel and dice onions and carrot. Peel and mince garlic.

Rinse greens, more than once as needed to remove all the grit. Remove tough stems. Chop coarsely.

In a colander, drain and rinse beans.

In a large skillet over medium-low heat. Add garlic, carrot, onion and greens. Cook until onions are soft.

Add ½ cup reserved pasta water and seasonings. Cook until greens are tender.

Add beans to greens. If needed, add a little more reserved pasta water to make a sauce.

Add cooked pasta to greens and beans. Toss to combine. Cook until pasta is heated completely, about 5 more minutes.
