STEAK BAKE CASSEROLE WITH TANGY MUFFINS

11/2pounds round or cube steak, cut in narrow strips

1/3cup flour

1teaspoon salt

1/4teaspoon black pepper

1medium onion, sliced thin

1green pepper, seeded and sliced

1pound can tomatoes

14-ounce can sliced mushrooms

3tablespoons molasses

3tablespoons soy sauce

1tablespoon sesame seeds

110-ounce package frozen French cut green beans, thawed and drained

Tangy Muffins:

11/4cups flour

11/2teaspoons baking powder

1teaspoon dry mustard

1/2teaspoon salt

1/2cup milk

2tablespoons cooking oil

1egg

Preheat oven to 400 degrees. Place meat in a greased casserole and sprinkle with flour, salt and pepper. Toss to coat meat. Bake uncovered for 20 minutes. Add onion, green pepper, tomatoes, mushrooms, molasses and soy sauce; mix well. Cover and bake an additional 30 minutes. Combine muffin ingredients. Remove casserole from oven and stir in green beans. Drop muffins by tablespoon onto hot meat mixture. Sprinkle with sesame seeds. Bake an additional 15 to 18 minutes. May be served over rice or noodles.

Rice Pudding

1cup rice

1/4teaspoon salt

2quarts milk

2sticks cinnamon

1/2cup sugar

5eggs

Wash rice and mix with salt, cinnamon and 1 quart of milk in a large saucepan. Cook over low flame for about 90 minutes. Stir frequently and gradually add remaining milk and sugar. Remove cinnamon sticks. Beat eggs in large mixing bowl. Add rice mixture and place in a large buttered casserole. Sprinkle top with cinnamon. Bake at 325 degrees. Place casserole in a pan of water and bake for 90 minutes.
