Triple Chocolate Chip Toffee Cookies

2sticks butter (1 cup)

1/2cup shortening

1tablespoon light corn syrup

3/4cup granulated sugar

13/4cups packed light brown sugar

3large eggs

2teaspoons instant coffee

33/4cups all purpose flour

1heaping teaspoon salt

2teaspoons baking soda

2teaspoons vanilla extract

8tablespoons English toffee flavored cappuccino powder plus 1 tablespoon, divided

12ounces semi-sweet chocolate

1cup milk chocolate mini kisses

3ounces bittersweet chocolate chips

1cup chocolate covered toffee pieces (24 mini Heath bars, coarsely chopped)

3/4cup toasted pecans, coarsely chopped

Preheat the oven to 350 degrees. Cream together with a mixer the butter, shortening and corn syrup. Add granulated sugar and brown sugar; beat until light and fluffy. Add eggs and coffee together in a separate bowl, then add to mixer. Beat well, and add vanilla. In a separate bowl, sift together dry ingredients; flour, salt, baking soda and cappuccino powder. Add the dry ingredients gradually and mix well. In another bowl, combine semi sweet chocolate, milk chocolate mini kisses, bittersweet chips, chopped nuts and Heath bar pieces. Add 1 tablespoon cappuccino powder. Add the nuts and chocolate to the dough batter. Stir in by hand until well combined. Drop by 1/4 cup dollops onto cookie baking sheets. Chill for 15 minutes. Bake for 7 to 10 minutes until lightly golden. Cool for 5 minutes and transfer to cooking rack. Dipping ingredients: Melt 1 bag semi sweet chips in a double boiler with 1 teaspoon shortening. Melt 8 ounces white chocolate and place in a Ziplock bag. Snip a small corner. Store in a cool, dry place. Recipe yields 4 dozen.
