Hugh G. Earnhart’s “Eat like a Thresherman: Recipes of a Farming Generation”

Barbecued Beef

2pounds beef shoulder

1 quart water

1quart tomatoes

1clove garlic

1/2cup sauce

1/2cup Worchestershire sauce

2onions

1tablespoon each sugar and salt

Cook meat until it falls apart, then add ingredients and simmer.

Corn Chowder

3slices salt pork

1medium onion, sliced

4medium potatoes, sliced

2cups water

6large soda crackers

2cups milk

2cups cooked corn, fresh or canned

1teaspoon salt

1/4teaspoon pepper

Cut salt pork into cubes and brown in a large saucepan. Add onion and cook until tender and lightly browned. Add potatoes and water, and cook until potatoes are tender. Soak crackers in milk. Add corn, salt, pepper and soaked crackers to the cooked potato mixture. Heat to boiling. Serves 4. For vegetable chowder, omit corn and milk and add 3/4 cup diced, cooked carrots, 1 tablespoon minced celery tops, 1 tablespoon minced green pepper and 4 cups cooked tomatoes.

Graham Cracker Cream Cake

1/2cup shortening

1cup sugar

2eggs, beaten

1cup sifted cake flour

2teaspoons baking powder

1/4teaspoon salt

1cup graham crackers crumbs

1cup milk

1teaspoon almond extract

Cream shortening and sugar together until fluffy. Beat in eggs. Sift flour, baking powder and salt together 3 times, ad crumbs and add alternately with milk and almond extract to creamed mixture. Pour into two 8-inch cake pans lined with wax paper. Bake in a moderate oven (350 degrees) for 25 to 30 minutes. Put layers together with a cream filling and frost top and sides with a butter frosting.
