Hugh G. Earnhart’s “Eat like a Thresherman: Recipes of a Farming Generation”
APPLE SNOW
3large apples
3egg whites
1/2 teaspoon powdered sugar
Jelly
Pare, core, quarter and steam sour apples. Run through a sieve, let cool and gradually add to the beaten egg whites in which is placed powdered sugar, whipping all the while apples are being added. Place in a dish, garnish with bits of jelly, chill and serve.
MARSHMALLOW CUSTARD
1/2 pint cream or milk
1 cup granulated sugar
2 eggs
1 small can diced pineapple
1/2 pound chopped marshmallows
Make a boiled custard with the cream or milk, sugar and well-beaten eggs. Boil until thick and cool. Have diced pineapple and chopped marshmallows ready and pour the cold custard over these. Chill and serve.
FRUIT DELUXE
1 12-ounce can cherry juice
1 pound can pears
1 package lemon-flavored gelatin
1 cup heavy cream
2 tablespoons sugar
1 teaspoon vanilla
1 pound can apricots
Heat cherry juice with 1/2 cup syrup from pears. Add gelatin and stir until dissolved. Cool until congealing starts. Pour into ring mold and chill until firm. Unmold on large plate. Whip cream, gradually adding sugar and vanilla. Pile in center of ring. Arrange pears and apricots around ring. Loganberry or cranberry juice may be substituted for cherry juice. Peach halves and pineapple chunks may be used instead of pears and apricots. Serves 6.
