SWEET POTATO MUFFINS

118.5-ounce package spice cake mix

113-ounce can sweet potatoes, drained

1cup uncooked quick-cooking oatmeal

2eggs or 1/2 cup egg substitute

1/2cup water

2teaspoons grated orange zest

1/2cup fresh orange juice

1tablespoon ground cinnamon

Preheat oven to 350 degrees. Lightly spray two 12-cup muffin pans with vegetable oil spray, or line the pan with paper cups. In a large mixing bowl, stir all ingredients together. Using an electric mixer, beat according to the package directions. Spoon the batter into muffin cups. Bake for 22-24 minutes, or until a cake tester or wooden toothpick inserted in the center comes out clean. Transfer muffins to a cooling rack. Let cool for 15-20 minutes before serving.

CANNED BISCUIT DOUGH DONUTS AND HOLES

Peanut oil, for frying

1teaspoon ground cinnamon

1/4cup sugar

2cups confectioners’ sugar, divided

5tablespoons milk, divided

1teaspoon vanilla extract

1/4cup cocoa powder

2cans large buttermilk biscuits

Colored sprinkles

Chocolate sprinkles

Heat two inches peanut oil in a large pot to 350 degrees. In a shallow bowl, stir together cinnamon and sugar and set aside.For vanilla icing: In a small bowl, whisk together one cup of confectioners’ sugar, two tablespoons milk and one teaspoon vanilla extract. Set aside. Chocolate icing: In another bowl, whisk together one cup confectioners’ sugar, 1/4 cup cocoa powder and three tablespoons milk and set aside. Lay out biscuits on a cutting board, cut a hole from the middle of each. Fry donuts and holes in the oil until golden, then flip and fry the other side. Drain on paper towels and toss in cinnamon-sugar or ice and decorate with sprinkles as desired.
