“FIRST UNITARIAN CHURCH COOKBOOK”

Cereal Crumb Muffins

Instead of throwing away the crumbs from the bottom of the otherwise consumed boxes of cold cereal, save them until you have a couple of cupfuls and use them thusly:

2cups cereal crumbs

11/4cups flour

1cup dry oatmeal

1/2teaspoon salt

1tablespoon baking powder

2 to 3tablespoons brown sugar (omit if crumbs are from highly sweetened cereals)

1egg (or 2 egg whites)

2 to 3tablespoons cooking oil

11/4cups milk

Mix together first 6 dry ingredients. In a separate, medium sized mixing bowl, beat together egg, cooking oil and milk. Stir the dry ingredients into the liquid ingredients fairly thoroughly and spoon into a greased muffin tin.

Bake at 350 degrees for 25 minutes and hope for the best. Makes 12 small muffins, but usually I divide into only 10 bigger ones. (After some experience with this recipe, you might want to vary the ingredients, such as by substituting mashed bananas for a cup of the cereal crumbs and some of the milk, or by substituting additional flour for some of the cereal crumbs to make a lighter muffin.)

Breakfast Casserole

1pound link sausage

10slices whole wheat bread, cubed

2cups shredded cheddar cheese

5eggs

11/2cups milk

1can cream of mushroom soup

1/2soup can milk

Grease a 9- by 13-inch pan. Brown, drain and cut up sausage into small slices. Scatter bread in bottom of pan. Top with cheese and sausage. Mix eggs and first 11/2 cups milk and pour over mixture in pan. Cover and refrigerate overnight.

The next morning, preheat oven to 300 degrees. Mix mushroom soup and 1/2 can of milk together and pour over casserole. Bake for 1 hour uncovered. Slice and serve.
