Junior Women’s League of Canfield’s “SIMPLE PLEASURES”
Sweet Potato Salad with warm bacon dressing

6slices bacon, medium dice
1red onion, finely sliced
3cloves garlic, finely chopped
3/4cup white wine vinegar
1/2 cup olive oil
2tablespoons granulated sugar
4sweet potatoes, peeled, cooked and cut into 1-inch dice, kept warm
Salt and freshly ground pepper
4green onions, finely sliced
1/4cup chopped parsley
Heat pan over high heat. Add bacon and cook until just crisp. Remove bacon to a towel-lined plate. Pour off all but 2 tablespoons of the fat. Add onions and garlic and cook until soft.
Remove pan from heat; add vinegar, olive oil, sugar and cooked bacon. Place the potatoes in a large bowl, pour the dressing over them and season with salt and pepper. Fold in the green onions and parsley. Serve at room temperature. Yield: 8 servings

Spinach Salad

1 bag fresh spinach, torn in pieces
1 bunch scallions, chopped
1/2 cup slivered almonds
1 pint strawberries, sliced
1 bunch fresh dill, chopped
Combine all ingredients and refrigerate. Serve with dressing (see recipe below).
Dressing:
1/2 cup light olive oil
1/4 cup red wine vinegar
1/4 cup sugar
1/4 teaspoon garlic powder
1/4 teaspoon pepper
1/4 teaspoon salt
1/4 teaspoon dry mustard
1/4 teaspoon onion powder
Combine and mix well.
