Corned Beef Hash

My mom loved corned beef hash and made it all the time. I don’t have her recipe because I would never eat it … I HATED it as a kid. By the time I learned to like it she was gone and her recipe is lost forever. All I know are the ingredients she used, and I added the cheese. I equate corned beef hash to brussels sprouts, something you learn to love as you age!! Anyway, this version is all mine, but the memories of her trying to get me to “try it” will remain with me forever … for what it’s worth, Mom, I LOVE IT NOW!!!

Ingredients:

1 can corned beef (about 1 cup)

1 medium onion, chopped

1 bell pepper, chopped

1 16-ounce package frozen hash brown potatoes (the cubed ones)

1 cup shredded cheddar cheese

4eggs

3 tablespoons olive oil

Directions:

Saute the chopped onion and pepper in about 1 tablespoon olive oil until tender. Add the corned beef until well combined and hot. Deep fry the hash browns until browned. (Deep frying helps speed along the process.) Drain well. Fry the eggs to your liking, using the remainder of the olive oil to fry the eggs. Place in 9-inch round baking dish in this order: Fried potatoes, shredded cheese, corned beef mixture, including peppers and onions. Top with cooked eggs. Makes about 4 servings.
