“Recipes Of Youngstown 2”

Block Party Beans

by Noel Jenkins

2pounds ground beef

16ounces wax beans, drained

2cups chopped onions

1cup diced celery

1can tomato soup

1/2cup ketchup

6ounce can tomato paste

17ounces lima beans, drained

16ounces chili beans, undrained

16ounces pork and beans, undrained

16ounces green beans, drained

1/2cup brown sugar

2tablespoons dry mustard

Brown meat and drain in medium sized roaster. Add onion and celery and continue cooking until soft. Add soup, ketchup and tomato paste. Add beans, brown sugar and mustard. Bake for 1 hour at 350 degrees, uncovered.

Note: Sizes of cans may have changed over the years, but you get the drift. This can be frozen in smaller quantities if you have leftovers.

California Onion Potatoes

by Noel Jenkins

I got this recipe when I was in eighth grade home economics class. And that was quite a few years ago. We use this with all kinds of meat and potatoes.

Potatoes (any kind)

1envelope Lipton Dry Onion Soup mix

1stick butter

Wash and cube any kind of potatoes with skin on. Place in a casserole dish and cover with one envelope of Lipton Dry Onion Soup mix. Slice one stick of butter. Lay slices on top of potatoes. Bake at 350 degrees for 1 hour, uncovered.

Noel: You can adjust the amount of potatoes to suit your needs (and the butter and soup mix also). I usually make a 9-by- 13-inch baking dish with these ingredients (1 soup and 1 butter). I have also used Knorr’s soup mix ... same taste.
