APPLE SPICE CAKE

My mom and I loved anything with apples, but my husband always preferred cake instead of cobblers or pies. Mom didn’t like chocolate cake. I didn’t like yellow or white cake. This recipe is our version of a compromise. It’s easy, quick and my Mom considered a lazy cake. (Meaning it didn’t require peeling, sifting or any finger crossing to make sure it came out right.) I learned a long time ago to keep chopped nuts on hand because when Mom and I got together, they were going to be necessary!
Cake:
1box spice cake mix, made according to directions on box
1can of apple pie filling (cut the apple pieces in half)
1/2cup chopped pecans (optional) (but not in my house!)
Spread the cake mix in a greased and floured 9-by-13 pan. (You can use cooking spray. I suggest the type with flour in it.) Place the apples evenly on top of cake by small spoonfuls. At this time, you can add about 1/2 cup chopped pecans. Walnuts or pistachios are also a good choice.
Butter Glaze Drizzle:
2tablespoons butter, very soft
1teaspoon caramel or vanilla flavoring or extract
1tablespoon milk
powdered sugar, sifted
caramel ice cream sauce (optional)
Mix butter and flavoring. Add 1 tablespoon milk and some sifted powdered sugar, usually about a cup. You can add more milk and powered sugar if you want more than just a drizzle of frosting. You can spread it very thin on a slightly warm cake. Drizzle caramel sauce over cooled cake if you wish. But then you have to call it “Caramel Apple Cake.”
