Love Letters

I was digging through my grandmother’s cookbooks and found this. She must have written it down a long time ago. Or perhaps my mom or my Aunt Helen did. Either way... I have it copied.

Dough:

2cups flour

2tablespoons sugar

1/4teaspoon salt

3/4cup chilled butter

4slightly beaten egg yolks

Sift flour, salt and sugar. Cut in the chilled butter. (The recipe says to press the butter against the sides and bottom of the bowl with a fork to cut it into the flour mixture. I’m thinking “pastry blender”). Add the egg yolks. Mixture will be crumbly, but form into a ball, and on a lightly floured board, squeeze the dough until well blended. (Yep, those are the instructions!) Divide dough in half, wrap in waxed paper and refrigerate for at least an hour.

Filling:

1/2cup coarsely chopped walnuts

1teaspoon grated lemon peel

2egg whites

1/4cup sugar

1/4teaspoon cinnamon

Mix the nuts and lemon peel and set aside. Beat the egg whites until frothy and gradually add sugar and cinnamon, beating until stiff peaks form. Fold nuts into egg whites.

Assembly: Roll out dough and cut into 2 or 3 inch squares. Place a teaspoon of filling on each square and fold over the top to make it resemble an envelope. Bake on a lightly greased cookie sheet at 350 degrees until brown on bottom and dough is cooked.
