v “Crossbones”: John Malkovich is Blackbeard in NBC summer saga; $45, Universal.
“Hell’s Kitchen” (8 p.m., Fox): Season 13 premieres. Gordon Ramsay must need some primal scream therapy — it seems as though Season 12 just ended.
“Vaccines — Calling the Shots” (9 p.m., PBS): This latest episode of “Nova” looks at how diseases that were largely eradicated in the U.S. a generation ago are returning, in part because parents are skipping their children’s shots. The program tracks epidemics around the world and explores the science behind vaccinations.
