CLOTHES PINS
CLOTHES PINS
by Maryann Demarinis Fiala
This was my mother’s recipe and they are delicious!
Dough
3cups flour
2tbsp. sugar
1lb. shortening, divided
2egg yolks, beaten with 11/4 cups water
Add sugar to flour; cut in 1/4 of the shortening (The other 3/4 of shortening will be used to spread on dough). Add egg yolks beaten with water and mix as you would for pie. Put mixture in refrigerator. Once an hour, take out the fridge and spread with 1/3 of remaining shortening. Do this three times. Take 1/4 of the dough out of the fridge to work at a time. Roll and cut into 8” strips and wind loosely around clothespins. Bake at 425 degrees for 5 minutes and 375 degrees for 10 minutes. Let cool for two minutes and work gently off of pins as cookies are easy to break.
Filling
1cup milk
4tbsp. flour
1/2cup butter
2cups powdered sugar
6tbsp. marshmallow whip
1 tsp. vanilla
Cook milk and flour until thick; let cool. Cream together butter, powdered sugar, marshmallow whip and vanilla. This is enough for approximately 100 cookies. Pipe into cookies with desired decorating tip.
