OLYMPICS (8 p.m., NBC): It’s hard to tell who had a better time in London: Michael Phelps, who cemented his claim as the greatest Olympian ever; Gabby Douglas, who struck gold in gymnastics; or NBC, which enjoyed huge ratings, despite lots of criticism. All good things must end, though, as the Games conclude with a closing ceremony that promises plenty of visual and musical splendor before the Olympic flame is snuffed.
“Hell on Wheels” (9 p.m., AMC): The gritty Western drama series about the building of the Transcontinental Railroad roars into its second season with our hero Cullen Bohannon (Anson Mount) doing some antiheroic things, such as robbing trains.
“Animal Practice” (10:38 p.m., NBC): This will be the only sitcom you’ll see this season in which a monkey named Crystal gets third billing behind two human stars (Justin Kirk and JoAnna Garcia Swisher). The show gets a special sneak preview after the Olympics.
“Comedy Central Roast” (10 p.m., Comedy Central): Roseanne Barr will be on the hot seat for the latest, and we expect her to get soundly thrashed. Jane Lynch is our host for the verbal fireworks.
