Youngstown cook’s pie wins blue ribbon at online club
Blushing Peach Pie, developed by Youngstowner Jacklyn Bertolini, won a blue ribbon from Just a Pinch Recipe Club, a new online social community at www.justapinch.com. The site is a venue for cooks to share recipes and exchange ideas.
FRANKLIN, TENN.
Blushing Peach Pie, a result of the fruitful imagination of Youngstown cook Jacklyn Bertolini, has won a blue ribbon at Just A Pinch Recipe Club, a new online social community.
The club was developed for and by cooks at www.justapinch.com.
Just a Pinch food editor Janet Tharpe chose Bertolini for the honor because her festive dish was both delicious and easy to prepare.
The recipe for Blushing Peach Pie, along with thousands of others, can be viewed, printed and shared free at Just a Pinch.
Bertolini is one of several area residents who participate in the club.
Members can post their own recipes, try others, print grocery coupons and enter recipe contests.
Also available is a personal online recipe box to save recipes, make grocery lists and plan meals.
Members also can create and join discussion groups, chat about recipes and share cooking tips.
Blushing Peach Pie
Filling ingredients:
4-5cups of sliced fresh peaches
1cup sliced fresh strawberries
1/2cup granulated sugar
Crust:
2 cups all-purpose flour
1 teaspoon salt
2/3cup plus 2 tablespoons butter- flavored shortening
1/4cup cold water
Mix filling ingredients.
Mix flour, salt and shortening with a fork or pastry blender until it resembles a meal-like consistency. Add cold water and mix, then form into two equal-size patties and refrigerate for about a half-hour. Roll out dough and form into a pie dish. Add filling and lay top crust over pie. Seal by folding top edge over bottom edge and decorate edge with fork. Bake at 375 degrees for 40 minutes. Cool completely before cutting. Serve with ice cream or whipped cream.
