Cola cake delicious blast from past


Dear Heloise: I have an original recipe for Heloise’s Cola Cake — cut from a newspaper from the 1960s. It was a family favorite back then, when we had four young children. It turned out so yummy that we baked it quite often either for family gatherings or to take to potluck meals. Kaye R., Farmington, N.M.

Kaye, thank you for sending this old-fashioned and yummy recipe along. Here it is for everyone to give it a try. You will need:

Heloise’s Cola Cake

2 cups flour

2 cups sugar

1 cup (2 sticks) butter or margarine

3 tablespoons cocoa

1 cup cola soda

1‚Ñ2 cup buttermilk

2 beaten eggs

1 teaspoon baking soda

1 teaspoon vanilla

11‚Ñ2 cups miniature marshmallows

Combine flour and sugar in a mixing bowl. Heat butter, cocoa and cola to boiling and pour over the flour-and-sugar mixture, mixing thoroughly. Mix buttermilk, eggs, baking soda, vanilla and marshmallows. Add to first mixture and stir well. Batter will be thin. Bake in a sheet pan, 13 by 9 by 2 inches, at 350 F for 30-35 minutes. Ice while hot.

COLA ICING

1 cup (2 sticks) butter or margarine

3 tablespoons cocoa

6 tablespoons cola soda

1 box confectioners’ sugar

1 cup nuts, pecans or walnuts

Combine butter, cocoa and cola. Heat to boiling and pour over sugar, beating well. Add nuts and spread on the hot cake. Heloise

Dear Heloise: A lot of people open the oven door to help it cool down after baking something.
