“Mad Men” (10 p.m., AMC): Change is in the air as television’s reigning drama returns for its hotly anticipated third season. The British invasion of Sterling Cooper has led to rampant cutbacks, provoking lots of anxiety among our dapper ad execs. Meanwhile, on the home front, Don (Jon Hamm) and Betty (January Jones) attempt to recover from their marital turbulence with a baby on the way. But some things never change: The Emmy-winning “Mad Men” remains, moody, stylish and compulsively captivating.
