“Dear Food Network” (9 p.m., Food Network): Got chow worries? Ask the pros before Thanksgiving.

“Einstein” (9 p.m., History): For decades, to be called an “Einstein” is to be hailed as the brainiest person around. But there was a time when even the original Albert Einstein was dismissed as less than a genius. Cable’s History channel presents “Einstein,” a two-hour look at his 15-year struggle to prove the Theory of Relativity. It would upend three centuries of scientific thought and lay the groundwork for modern physics. But its emergence is set against the backdrop of ostracism by Einstein’s fellow scientists and the travails of a failed marriage, as well as the upheaval of World War I. Woven through the film are interviews with leading physicists, astronomers, historians and Einstein scholars.

“One Tree Hill” (9 p.m., The CW): It’s gimmick time on “One Tree Hill,” where they’re paying homage to the films of the 1940s. Karen’s Cafe is even done up like the nightclub in “Casablanca.” Castmember Chad Michael Murray penned the script.

“CSI: Miami” (10 p.m., CBS): Believe it or not, “CSI: Miami” is celebrating its 150th episode tonight. That’s a whole lot of scenes with Horatio taking off his sunglasses and staring pensively at a suspect. This week, the team searches for a killer who kidnapped a baby.
