Recipe for cake-mix cookies reprinted for reader


Dear Heloise: I can’t remember how to make cookies from a cake mix. I thought I did not have to write it down, that I would always remember it. Well, guess what? I don’t remember it! Please help and reprint this for me. Patti Winget, Springfield, Mo.

This is one of the most-requested Heloise recipes, and it’s time to reprint it. The best part is that you can choose any flavor cake mix — chocolate, strawberry or even pineapple.

Cookies from cake mix

1 (18.25 ounces) box cake mix

2 eggs

1‚Ñ2 cup vegetable oil

Preheat the oven to 350 F. Mix only the ingredients listed above (nothing else) in a large bowl until blended. You can, however, add a handful of raisins, nuts or chocolate chips. Drop the batter by spoonfuls (I use two iced-tea spoons) onto an ungreased cookie sheet about 2 inches apart. Bake for 8 to 10 minutes or until they turn light brown. Cool and enjoy.

Dear Heloise: To score a cucumber, (after washing the skin) take a fork in hand, with tines pointing inward, and simply pull down into the skin of the cuke, causing stripes. Dear Heloise: What to do if a glass coffee carafe is left on too long and coffee is burned on the bottom? Let the pot cool, rinse out as much as you can with cool water, then sprinkle table salt in the bottom of the pot. Fill about half-full with ice cubes and swirl several times. If necessary, repeat.
