Cake-mix cookie recipe is repeated



Dear Heloise: I just read your article where a person wrote in for you to re-print the cookie recipe that's made from a cake mix.
This is something I've been using for several years and have had great success with. I have the original recipe I clipped from your column many years ago.
I've found that a white or yellow cake mix works the best, as the chocolate mix has a tendency to make the cookie hard and dry out quicker for some reason.
I like to use different flavoring, along with nuts, raisins and chocolate chips, to make the cookies all different for special occasions. I also sprinkle the cookies with different-colored sugar -- they look so pretty.
Since my kids like cutout cookies, I have taken the same recipe and perfected it so it can be used for that purpose as well. To the regular recipe, I add 2 heaping tablespoons of flour, which stiffens the batter so it can be rolled out on a cutting board. I flour the cutting board, cookie cutters and rolling pin, which helps keep the batter nice to use. Fred, sounds like you are a good baker! These cookies are easy to make, and here is the recipe for anyone who would like to give them a try. You will need:
1 (18.25 ounces) box cake mix
2 eggs
1/2 cup vegetable oil
Preheat the oven to 350 F. Mix only the above ingredients (nothing else) in a large bowl until blended. Drop spoonfuls of batter onto an ungreased cookie sheet about 2 inches apart. Bake for 8 to 10 minutes. Cool and enjoy! Heloise
Dear Heloise: Avoid having melting ice cubes watering down a drink. Make ice from the drink mix you are consuming. This works wonderfully and is a favorite with my whole family. Francis Thorne-Coley, San Antonio
Dear Heloise: After seeing entire bags of chips, etc., vanish at one sitting with nothing left for school lunches, I tried something new. I took the store-bought bag, got out some small plastic bags and filled them according to the one-serving info on the bag. I took all the bags I made and put them back into the original bag.
They don't get dirty on the outside, and my snacks last a lot longer because people stop after one serving. Mary P., Roseville, Calif.
