Asian-inspired dish is simple to prepare

"Simplifying recipes has always been my goal on television," Ted Allen, the "Queer Eye for the Straight Guy"'s food and wine connoisseur, told me in a recent interview. "Instead of standing around eating cereal out of the box, we can have smart, cool, easy food."
This pork tenderloin coated with an Asian-spiced glaze is adapted from one of the quick and easy recipes in Allen's new book, "The Food You Want To Eat" (Clarkson Potter, $27.50). Stir-fried broccoli with garlic soy completes the Asian-inspired meal.
HELPFUL HINTS
Steamed or fresh Chinese noodles can be found in the produce section of the supermarket.
Sherry can be bought in small bottles or splits at a wine store.
Toasted sesame oil is available in most supermarkets.

Wine suggestion: You make this with dry sherry, why not drink dry sherry with it? Look for the "fino" style.
SHOPPING LIST
To buy: 1 bottle soy sauce, 1 small bottle dry sherry, 1 small bottle honey, 1 bottle toasted sesame oil, 1 small bottle red pepper flakes (optional), 3/4 pound pork tenderloin, 1 package fresh or steamed Chinese noodles, 1 package broccoli florets.
Staples: Garlic.
TED ALLEN'S GRILLED PORK TENDERLOIN WITH ASIAN FLAVORS
1 tablespoon soy sauce
1 teaspoon dry sherry
3/4 teaspoons honey
1 teaspoon toasted sesame oil
1/4 teaspoon red pepper flakes (optional)
3/4 pound pork tenderloin
Preheat broiler or grill. If using broiler, line a baking tray with foil.
In a small bowl, stir together the soy sauce, sherry, honey, sesame oil and red pepper flakes.
Broiler method: Place tenderloin on baking tray and broil 5 to 6 inches from the heat for 4 minutes. Turn tenderloin and brush with soy glaze. Cook for 4 minutes. Turn and brush again with the glaze. Move the pork to 10 inches from the broiler heat.
Grill method: Place tenderloin over medium-high heat for 4 minutes. Turn and brush with soy glaze. Cook for 4 minutes. Turn and brush again with the glaze. Move the pork to a cooler section of the grill.
For both methods: Turn and brush the pork with the glaze every now and then, until a good crust has developed and the internal temperature reaches 140 degrees, about 10 to 13 minutes. Let stand 5 minutes before slicing. Makes 2 servings.
Per serving: 231 calories (27 percent from fat), 7 g fat (2.2 g saturated, 3.5 g monounsaturated), 108 mg cholesterol, 36.2 g protein, 3.3 g carbohydrates, 0.1 g fiber, 350 mg sodium.
STIR-FRIED BROCCOLI WITH GARLIC AND SOY
1/4 pound fresh or steamed Chinese noodles (about 2 cups)
11/2 tablespoons toasted sesame oil
4 cups broccoli florets
1 garlic clove, crushed
1 tablespoon soy sauce
Place noodles and 1/2 cup water in a microwave-safe bowl. Cover with plastic wrap and microwave on high 2 minutes.
Heat oil in a wok over high heat. When hot, add broccoli and stir-fry 3 to 5 minutes, until almost tender. Add garlic and cook 30 seconds. Add noodles and soy sauce and stir for another minute; broccoli should be cooked. If not, cook for another minute. Makes 2 servings.
Per serving: 358 calories (29 percent from fat), 11.7 g fat (1.6 g saturated,7.6 g monounsaturated), no cholesterol, 13 g protein, 53 g carbohydrates, 6.7 g fiber, 318 mg sodium.
