Favorite foods: not much to look at, but tasty

Dear Heloise: I read about favorite family foods, and it gave me a good laugh. Our dish is called Spinach Mess.
You put a bed of mashed potatoes on your plate and top it with a layer of cooked spinach. On top of that put a hard-cooked egg. Crosscut it a few times with a knife and fork, and sprinkle it with salt, pepper and vinegar, then crosscut it some more. Yum!Carol Cason, Dublin
Dear Heloise: I read the hint from the reader asking about chili powder. She might have been referring to "chile puro" here on the Mexican border. It is pure chili powder, without garlic, cumin, oregano, salt or other additives. One of my favorite markets has about four or five varieties of chile puro, depending on which flavor and which degree of heat you want for the dish you are making. And in some dishes, chile puro is desired (example: a candy recipe that I frequently make that needs the "heat" but would not be good with garlic, cumin, oregano, salt, etc.). Thanks! Dear Heloise: A few years ago, my boyfriend and I went fishing and caught quite a monster. We went home and cleaned and scaled it in the sink. It had scales the size of fingernails! I didn't know any better and put the scales in the disposal. What a mess! The water wouldn't go down, and boy, did it stink! Terri Weiss, via e-mail
Dear Readers: We are going to be introducing a new food feature in the Wednesday Kitcheneering column. We are trying to decide what to title it and thought we would ask you, since you are the ones the column is for. We are asking you to send us your favorite title from those listed below, as well as a favorite food or kitchen hint. Once we have determined the winning title, we will randomly pick out 10 responses from readers and send them each a copy of my book "In the Kitchen With Heloise."
