TOURTIERE (FRENCH CANADIAN MEAT PIE)

5 lbs. ground pork
3 med. onions, finely diced
4 garlic cloves
3 tsp. salt
1 tsp. ground cloves
1 tsp. dried thyme
1-1/2 tsp. dried sage or dried savory
1 tsp. ground black pepper
2 cups water
1-1/2 to 2 cups fine, dry bread crumbs
Pie Dough:
4 cups flour
1 lb. shortening
3/4 to 1 cup ice water
1 tsp. salt
To prepare pie dough, cut shortening into flour. Mix salt with cold water. Add water to mixture to flour mixture, stirring in just enough to moisten. Roll out dough and place bottom shells in four (9-inch) pie plates. Roll out top crusts and set aside.
Place all filling ingredients, except bread crumbs, into stock pit; bring to low boil. Stir and cook 20 minutes, breaking up the meat until "pink" disappears. Remove from heat and stir in one cup corn bread crumbs. Let stand and cool 20 minutes. If all fat and liquid is not absorbed, stir in remaining 1/2 cup bread crumbs. Cool mixture well and spoon into pie shells; level out well. Mixture should not be too moist or to dry. Cover filled pies with pastry, egg washing rims first. Seal and flute edges. Bake at 400 degrees for 35 minutes.
CORN BREAD DRESSING WITH OYSTERS

8 to 10 cups corn bread, coarsely crumbled
2 slices white bread, toasted, torn into small pieces
2 eggs, hard boiled, chopped
1 cup onion, chopped
1 pint shucked oysters, drained, chopped or 2 (8 oz.) cans of whole oysters, drained, chopped
2 eggs beaten
1 tsp. poultry seasoning
5 to 6 cups turkey or chicken broth
In a large bowl, combine all ingredients except broth. Stir in enough broth until mixture is very wet. Pour into greased baking dish and bake at 350 degrees for about 30 minutes.
MOLASSES COOKIES

28 oz. sugar
12 oz. margarine
4 eggs
1 cup honey
1 cup molasses
1 cup milk
3-1/4 lbs. pastry flour
1-1/2 oz. baking soda
2 tbsp. cinnamon
1 tbsp. ginger
24 oz. cake crumbs
Mix sugar with margarine on low speed using paddle for three minutes. Add eggs and mix two minutes. Add honey, molasses and milk; mix one minute. Sift flour, baking soda, cinnamon and ginger together. Add dry ingredients with cake crumbs to sugar mixture, mixing only long enough to blend. Bake at 350 degrees for 10 to 12 minutes, or until done.
