HELOISE Use sought for leftover deviled egg filling



Dear Heloise: I'm a young mother and a new wife, just learning the tricks of the kitchen. My family loves deviled eggs, but there always seems to be filling left over. Do you or any of your readers have any suggestions as to what to do with this leftover filling? I hate to waste what could possibly be the missing ingredient in some other recipe. Thank you. Deviled eggs are yummy! The leftover filling can be stored in the refrigerator and then put into tuna, chicken or egg salad. It's also good as a spread on crackers.

Dear Heloise: After I buy a head of lettuce, I cut off the white stem at the base, cut the rest into quarters, rinse, dry and then store it in a zippered-top plastic bag in the refrigerator.
That bit of advance work means it takes only seconds for me to reach in and pinch off just the part I want: a leaf for a sandwich, or a handful of the crunchy parts for a salad!
No further rinsing and drying is necessary, and I don't have to work a solid head of lettuce out of the crisper.
With a child to cook for and a fast, working-mom life, this is a big time-saver for me, plus an incentive to eat healthier by just reaching for salad ingredients. Laurie, Via E-mail
Dear Heloise: I make loads of goodies for friends. Many of the items have lots of nuts, dates, coconut and candied fruits; thus the batter is stiff, making lots of work to get it mixed just right.
So, I decided to use the dough hooks on my electric mixer. It works like magic. Please try it.
I've made two recipes: one with melted butter and graham-cracker crumbs, then one with lots of the fruit, etc.
