It's a secret
An ingredient in the cuisines of China, India and the Middle East, rose water is just what its name indicates: a distillation of rose petals. Its intense and perfumy flavor is used in Indian rice puddings and lassi, an Indian shake made with yogurt.
But since it began to appear on supermarket shelf, Washington Post testers added it to the simple syrup that they sprinkle on fruit, to frosting for cupcakes and to homemade vanilla ice cream.
Advice to newcomers: Use sparingly until you get acquainted with its flowery power. If it's not to your taste, combined with water it makes a nice splash for dry skin on a hot day.
Pan by any other name...
Charcoal Companion can call it a Vertical Roasting Wok but let's face it, it's for grilling beer-can chicken. Chicago Tribune testers like the sturdy heft of the 12-inch wide pan, as well as its non-stick coating. Just fill the core with beer (or, OK, wine or broth) and surround the bird with assorted vegetables on the grate below. It's $13.50 at select stores.
Two sides better than one
Switchit silicone spatulas from Chef'n are fun to look at with their swirly design. The test kitchen loved the sturdiness (provided by a stainless-steel rod embedded in the interior), heat-resistance to 500 degrees and versatility: Both ends are functional.
It's also sold as a spoon. Switchits come in various colors and cost $4.50-$10 each at Crate & amp; Barrel stores. They're also online at chefsresource.com (866-765-2433).
