Fruit, turkey breast, crostini enliven salad

This cool salad is perfect for a hot summer evening. Ripe, juicy peaches and plump blueberries are at the height of their season.
These summer fruits combine with smoked turkey from the deli and a creamy dressing to make a colorful and tasty summer supper. The smoked turkey is cut into cubes. Ask the deli to cut the turkey in - 1/2-inch thick slice. This will make it easier to cut into cubes. The recipe is adapted from the U.S. Highbush Blueberry Association.
Crostini is Italian for "little crusts." These are toasted round of bread. They're topped with herbed goat cheese for this recipe.
HELPFUL HINTS
Any type of smoked turkey can be used.
Any type of spreadable herbed cheese and bread can be used for the crostini.
Use toaster oven to warm the crostini.

Preheat broiler or toaster oven.
Make salad.

HERBED CHEESE CROSTINI
1/2 French baguette
Olive oil spray
1 ounce garlic-herbed goat cheese
Preheat broiler or toaster oven. Cut bread on diagonal into six 1/2-inch slices. Spray with olive oil. Spread with cheese. Place under broiler for 11/2 minutes or until cheese melts. Makes 2 servings.
Per serving: 190 calories (30 percent from fat), 6.4 g fat (3.3 g saturated, 1.5 g monounsaturated), 11 mg cholesterol, 7.3 g protein, 25.3 g carbohydrates,1.5 g fiber, 76 mg sodium.
SMOKED TURKEY, PEACH AND BLUEBERRY SALAD
11/2 tablespoons light mayonnaise
3 tablespoons nonfat plain yogurt
3 tablespoons orange marmalade
2 teaspoons lemon juice
Freshly ground pepper
2 small, ripe peaches, pitted and sliced (about 1 cup)
1 cup blueberries
3/4 pound smoked turkey breast, cut into cubes
Several red lettuce leaves
Stir together mayonnaise, yogurt, marmalade and lemon juice in a bowl. Add pepper to taste. Add peaches, blueberries and turkey. Toss well. Place lettuce leaves on a platter and spoon salad on top. Makes 2 servings.
Per serving: 427 calories (20 percent from fat), 9.7 g fat ( 1.6 g saturated, 2.6 g monounsaturated), 114 mg cholesterol, 44.6 g protein, 42.1 g carbohydrates, 3.9 g fiber, 127 mg sodium.
