Catfish fever
The Catfish Institute is offering free spice blends for catfish in a nifty brochure along with tips on handling, storing and cooking farm-raised catfish.
The seasoning blends are Fireworks catfish rub, Farmer's Market Herb catfish seasoning and Blue Ribbon BBQ catfish seasoning. Each 1-ounce packet is enough to season at least 1 pound of fillets.
